Eddie Cook was born in Okinawa, Japan. He holds a bachelor's degree in engineering from Arizona State University. He is married to his wife, Jenny, with whom he has 5 children and 4 grandchildren.

Eddie previously worked as a global technology strategist for NetApp and as an engineer for Rand Federal, SGI, and Motorola. 

Eddie Cook currently serves as the Maripoca County Assessor. He was appointed to this position in 2020, and elected later that year. He is currently serving his first term. He previously served as a member of the Gilbert Town Council. Eddie was elected to that position in 2011 and served for 3 terms. He was named to vice-mayor while serving as a councilmember. He served as the president of the Arizona Municipal Water Users Association and chairman of the Maricopa Association of Government Domestic Violence Council.
