Eric grew up in Fairview and attended A.C. Reynolds High School. He earned a bachelor's degree in political science and government from the U.S. Naval Academy and a master's degree in international relations and affairs from Atilim University. Eric is married to his wife Rachel, and together they have 4 children. They live in the Reynolds community of Buncombe County. He has volunteered to coach youth baseball, softball, soccer, and basketball.

Eric is the operations manager at Hickory Nut Gap Farm, a fourth-generation family farm. He served for 25 years as a naval aviator and foreign area officer in the U.S. Navy, retiring with the rank of Commander.
